Bill Miller Bar-BQ starts construction at the Boerne site after a 2-year break

The restaurant was to be completed in 2020.

After a two-year hiatus, one of San Antonio’s iconic restaurants begins construction in the Hill Country. The dirt turns again at the location of Boerne’s first Bill Miller Bar-BQ. Construction on the new restaurant was scheduled to begin two years ago on April 1, 2020. Construction was expected to be completed by August 3, 2020, according to the Texas Department of Licensing and Regulation.

“We started this project before the COVID-19 pandemic and due to uncertainties in the business climate, inability to hire and staff a store, etc., we have delayed the start of construction of our Boerne site,” said Jim Guy. Egbert, CEO and Chairman of Bill Miller, in a statement to MySA.

Egbert said the company still had concerns about hiring for the site. However, he thinks the region can and will support a Bill Miller in Boerne. Egbert added that the aim is to open the Boerne site in mid to late summer.

“I think a lot of people are thrilled that construction has finally started,” said Chris Shadrock, Boerne’s director of communications. “The ‘coming soon’ sign had been up for a few years now.”

Construction on the 4,113-square-foot Bill Miller Bar-BQ began the week of March 25, according to Shadrock. The restaurant will be located at 31490 US Hwy I-10 Boerne, and construction is estimated at $800,000.

“This is the first Bill Miller in Boerne. The next closest is on I-10 near Leon Springs, which opened a few years ago,” Shadrock said.

According to the Bill Miller Bar-BQ website, there are 77 Bill Miller Bar-BQ restaurants and six Laguna Madre Seafood Company restaurants. MySA has contacted Bill Miller Bar-BQ for comment.
