Celebrate Comfort Food with the 5th Annual Austin Mac + Cheese Festival

Austin Food Magazine Editor-in-Chief Hayden Walker and Brooklyn Breakfast Shop Chef Ryan Rosen joined Steph and Rosie to talk about one of their favorite comfort foods, Mac and Cheese! Chef Ryan shared his recipe (below) and Hayden told us what to expect at this year’s festival!

To celebrate the festival’s 5th anniversary, Austin’s favorite mac-n-cheese party will take place at Celis Brewery Beer Garden, at 10001 Metric Blvd., for a slightly reduced event, of its great pre-pandemic extravaganza. Limited tickets are $ 45, available now at ticketbud.com.

Guests will be in mac-n-cheese heaven as talented chefs, restaurants, eateries and popular Austin food trucks prepare unique offerings and tastings for all to enjoy. Each ticket entitles you to unlimited food tastings, plus frozen Celis Brewery beer, soft drinks, backyard games, music, and more.

The festival takes place outdoors. Due to concerns related to COVID-19, we are grateful that we are currently in Stage 3 of the risk-based guidelines. While social distancing is not possible (standing in line, getting food, etc.), all participants are asked to monitor their health and stay home if they test positive. Wearing a mask between bites is recommended but not mandatory.

Chef Ryan’s Mac-N-Cheese

Cheese sauce

Place a heat-resistant bowl over a pot of boiling water

Add 1 lb of diced smoked cheddar cheese

2 cups of half and half salt and pepper to taste

1 small can of green peppers, hatched

It’s done when everything is melted

Boil 1 lb of medium pasta until cooked through

Filter and mix with the cheese mixture

Adjust the seasoning to taste

Fried onion filling:

1 yellow onion, minced and in a cup of salt and pepper buttermilk

Cut and let soak for at least 30 minutes

Onion flour mix

Mix 2 cups of flour

1 tablespoon of salt

1 teaspoon garlic powder black pepper onion powder ground fennel

Drain the onions and dredge them in the flour mixture and fry them in oil at 350 ° until golden brown

Put on top of the Mac and cheese and enjoy
